Paneer Shimla Mirch: Chef Kunal Kapur shares his easy and delicious recipe for this classic Indian comfort food. The celebrity chef and MasterChef India judge posted the recipe on Instagram on July 24, highlighting how making a simple dish taste exceptional can be more rewarding than preparing an elaborate meal. He describes it as a perfect, fuss-free option for both lunch and dinner.

The recipe begins by marinating 400 grams of paneer cubes with salt, turmeric, and chili powder. For the masala, coarsely grind cumin, coriander seeds, and peppercorns. In a kadai, heat mustard oil and add dry red chilies and the ground masala. Once they splutter, add chopped garlic, ginger, green chilies, and onion. Stir in turmeric, Kashmiri chili powder, coriander powder, and kitchen king masala, followed by chopped tomatoes and tomato puree.

In a separate pan, lightly toss large chunks of capsicum, onion, and tomato in mustard oil with salt. After a minute, add the marinated paneer and toss for two to three minutes. Combine the tossed vegetables and paneer with the simmering masala. Add a pinch of kasoori methi and fresh coriander, then cover and cook on low heat for five to seven minutes.

This paneer shimla mirch is best enjoyed hot with rotis, parathas, or even dal-chawal. The recipe is straightforward and delivers a wholesome, flavorful meal without requiring too much time in the kitchen, proving that simple cooking can yield sublime results.
